On le sabre entre amis, on le <a href=\"https:\/\/www.europe1.fr\/societe\/reveillon-du-nouvel-an-on-vient-de-lyon-pour-boire-le-champagne-sur-les-champs-elysees-3940472\">partage avec des inconnus sur les Champs-\u00c9lys\u00e9es<\/a> ou on le d\u00e9guste quasi religieusement en t\u00eate \u00e0 t\u00eate dans une ambiance plus intimiste. Bref, on l\u2019associe in\u00e9vitablement et sans forc\u00e9ment en \u00eatre conscient \u00e0 des circonstances de d\u00e9gustation particuli\u00e8res, construites par nous ou h\u00e9rit\u00e9es, et qui nous feront r\u00e9server la meilleure de nos bouteilles pour tel \u00e9v\u00e8nement. Mais qui du produit ou des circonstances de d\u00e9gustation impose l\u2019autre\u00a0?<\/p><p>Dans le m\u00eame temps, d\u2019autres circonstances, plus \u00e9conomiques, <a href=\"https:\/\/hal.archives-ouvertes.fr\/hal-03814793\/\">marketing<\/a> et parfois identitaires ou culturelles, s\u2019imposent elles aussi. Le champagne n\u2019est plus seul dans les rayons. Il y c\u00f4toie en premier lieu les cr\u00e9mants fran\u00e7ais, mais aussi toute une kyrielle de vins effervescents \u00e9trangers\u00a0: les <em>cavas<\/em> espagnols, les <em>proseccos<\/em> italiens ou encore, plus r\u00e9cemment, les <em>espumantes<\/em> br\u00e9siliens pour ne citer que quelques exemples latins.<\/p><p>Dans ce contexte relevant du domaine du <a href=\"https:\/\/hal.archives-ouvertes.fr\/halshs-03546887v1\">sensoriel<\/a>, un regard port\u00e9 sur les <a href=\"https:\/\/shs.hal.science\/halshs-03914400\">mots et les discours<\/a> des professionnels des fili\u00e8res et sur ceux des consommateurs se r\u00e9v\u00e8le riche d\u2019enseignements. Comme souvent dans l\u2019industrie agro-alimentaire, comme en parfumerie, les mots utilis\u00e9s et les discours construits autour des produits vis\u00e9s disent bien souvent plus sur celles et ceux qui les utilisent, leurs repr\u00e9sentations, les \u00e9valuations conscientes (ou non) auxquelles ils se livrent, que sur les produits eux-m\u00eames.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-f1f755f elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"f1f755f\" data-element_type=\"section\" data-e-type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-100 elementor-top-column elementor-element elementor-element-1231e2d\" data-id=\"1231e2d\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-3cf8580 elementor-widget elementor-widget-text-editor\" data-id=\"3cf8580\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<h2>Quand la s\u00e9mantique prend le pas sur la technique<\/h2><p>Comme fr\u00e9quemment dans le domaine des vins et spiritueux, le point de d\u00e9part se veut on ne peut plus \u00ab\u00a0objectif\u00a0\u00bb. Dans le secteur, on renverra par exemple \u00e0 des ph\u00e9nom\u00e8nes de pression de gaz carbonique. Des d\u00e9signations, des <a href=\"https:\/\/shs.hal.science\/view\/index\/identifiant\/halshs-01887219\">\u00ab\u00a0termes\u00a0\u00bb<\/a> comme disent les linguistes, correspondent \u00e0 une r\u00e9alit\u00e9 pr\u00e9cise et une seule. Le tout est circonscrit techniquement dans les textes r\u00e8glementaires.<\/p><p>\u00ab\u00a0<a href=\"https:\/\/institut-agro-dijon.hal.science\/view\/index\/identifiant\/hal-02407386\">Effervescent<\/a>\u00a0\u00bb, recouvre ainsi l\u2019ensemble de vins contenant du gaz carbonique et les professionnels proc\u00e8dent ensuite \u00e0 une subdivision en trois grandes sous-cat\u00e9gories selon la pression et la concentration en dioxyde de carbone. Le d\u00e9bat r\u00e9cent sur l\u2019utilisation de la d\u00e9signation \u00ab\u00a0Champagne\u00a0\u00bb pour des <a href=\"https:\/\/france3-regions.francetvinfo.fr\/grand-est\/marne\/champagne-fin-de-l-appellation-en-russie-depuis-le-1er-janvier-le-dialogue-se-poursuit-2399827.html\">effervescents russes<\/a> a \u00e9t\u00e9 l\u2019occasion de le rappeler\u00a0: car bien vite, la s\u00e9mantique prend le pas sur la technique.\n\nIl suffit en effet de poser son micro ou sa cam\u00e9ra l\u00e0 o\u00f9 vont sauter les bouchons le 31\u00a0d\u00e9cembre ou le 1<sup>er<\/sup>\u00a0janvier pour se rendre compte que nos <a href=\"https:\/\/shs.hal.science\/halshs-01236117\">repr\u00e9sentations<\/a> ne s\u2019encombrent pas de ces nomenclatures de sciences physiques pour employer tous ces termes. Seul \u00ab\u00a0perlant\u00a0\u00bb, peut-\u00eatre, n\u2019appartient encore qu\u2019au lexique expert.\n\n\u00ab\u00a0P\u00e9tillant\u00a0\u00bb et \u00ab\u00a0effervescent\u00a0\u00bb ont de leur c\u00f4t\u00e9 vu leur sens, en usage, \u00e9voluer pour devenir des mots ne disant finalement plus grand-chose d\u2019autre que \u00ab\u00a0vins (de qualit\u00e9) avec des bulles\u00a0\u00bb. \u00ab\u00a0Mousseux\u00a0\u00bb, pourtant \u00ab\u00a0neutre\u00a0\u00bb dans sa d\u00e9finition l\u00e9gale, prend lui une connotation plut\u00f4t n\u00e9gative aupr\u00e8s du consommateur. Dans un tel contexte, le terme technique a int\u00e9r\u00eat \u00e0 rester circonscrit aux seuls professionnels. Nos <a href=\"https:\/\/hal.archives-ouvertes.fr\/halshs-01806309\">recherches<\/a> montrent ainsi comment le \u00ab\u00a0Bourgogne mousseux\u00a0\u00bb a \u00e9t\u00e9 renomm\u00e9 avec efficacit\u00e9 \u00ab\u00a0Cr\u00e9mant de Bourgogne\u00a0\u00bb pour accompagner une mont\u00e9e en gamme du produit.\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-7edbee1 elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"7edbee1\" data-element_type=\"section\" data-e-type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-100 elementor-top-column elementor-element elementor-element-6e1fcf9\" data-id=\"6e1fcf9\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-b757210 elementor-widget elementor-widget-text-editor\" data-id=\"b757210\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<h2>Et le go\u00fbt\u00a0?<\/h2><p>Partant de donn\u00e9es produites en conditions contr\u00f4l\u00e9es avec de larges panels de consommateurs et d\u2019experts, nos travaux des derni\u00e8res ann\u00e9es ont crois\u00e9 des questionnaires d\u00e9connect\u00e9s de toute situation de d\u00e9gustation avec des questionnaires remplis en cours de d\u00e9gustation. On voit ainsi se dessiner ce qui, pour les panels fran\u00e7ais interrog\u00e9s, constitue le <a href=\"https:\/\/shs.hal.science\/halshs-01839256\/\">prototype<\/a> du vin effervescent.<\/p><p>Que le meilleur repr\u00e9sentant de la cat\u00e9gorie des effervescents soit le \u00ab\u00a0champagne\u00a0\u00bb n\u2019est pas une r\u00e9v\u00e9lation, et ce n\u2019est pas non plus l\u2019aspect le plus int\u00e9ressant. A Rio ou \u00e0 Sao Paulo, la dimension exp\u00e9rientielle produira aussi une terminologie plut\u00f4t spontan\u00e9e \u00e0 partir de termes techniques d\u00e9tourn\u00e9s chez les Br\u00e9siliens\u00a0: \u00ab\u00a0refrescante\u00a0\u00bb, \u00ab\u00a0<em>suave<\/em>\u00a0\u00bb, \u00ab\u00a0perlage\u00a0\u00bb\u2026<\/p><p>La dimension objective y prend cependant plus de place, notamment dans le discours expert. Presque paradoxalement, le recours \u00e0 la terminologie fran\u00e7aise se fait de mani\u00e8re plus massive que dans l\u2019hexagone.
