Si l\u2019on diminue la teneur en sel d\u2019un aliment mais que l\u2019on augmente les ar\u00f4mes, ou odeurs, li\u00e9es au sal\u00e9, par exemple l\u2019odeur de poulet r\u00f4ti, le go\u00fbteur aura la perception d\u2019un produit plus sal\u00e9 qu\u2019il ne l\u2019est en r\u00e9alit\u00e9<\/em>\u00a0\u00bb, explique la chercheuse.<\/p><p>Pour comprendre ces m\u00e9canismes, Charlotte Sinding pratique des exp\u00e9riences neurosensorielles sur des centaines de volontaires. Gr\u00e2ce \u00e0 l\u2019\u00e9lectro-enc\u00e9phalographie d\u2019une part et \u00e0 l\u2019imagerie par r\u00e9sonance magn\u00e9tique (IRM) d\u2019autre part, elle a \u00e9tudi\u00e9 les zones du cerveau stimul\u00e9es lors de s\u00e9ances de d\u00e9gustation. Conclusion : \u00ab\u00a0<em>Le cerveau int\u00e8gre d\u2019abord, l\u2019odeur et la saveur sous forme de flaveur. Cette repr\u00e9sentation mentale de l\u2019aliment, la flaveur, permet ensuite le renforcement de la saveur par l\u2019odeur. En d\u00e9coule la th\u00e8se selon laquelle les zones gustatives premi\u00e8rement activ\u00e9es par la pr\u00e9sence de sel dans un aliment seraient suractiv\u00e9es dans un second temps par les odeurs de cet aliment\u00a0: l\u2019aliment serait alors per\u00e7u plus sal\u00e9 qu\u2019il ne l\u2019est r\u00e9ellement.<\/em> \u00bb. Pour mener \u00e0 bien ce genre d\u2019exp\u00e9rience, encore faut-il avoir identifi\u00e9 des odeurs qui font mouche. N\u00e9e en Norv\u00e8ge de parents fran\u00e7ais, elle a pass\u00e9 son enfance au Portugal avant de s\u2019installer en France, puis de s\u2019offrir une parenth\u00e8se de trois ans en Allemagne. <br \/><br \/>Attir\u00e9e depuis toute petite par les insectes, elle se lance d\u2019abord dans des \u00e9tudes d\u2019\u00e9thologie, \u00e0 Rennes. Pour sa th\u00e8se, qu\u2019elle pr\u00e9pare \u00e0 l\u2019Institut national de la recherche agronomique (INRAE) de Dijon, elle \u00e9tudie la mani\u00e8re dont le cerveau du lapereau et celui de l\u2019homme per\u00e7oivent les m\u00e9langes d\u2019odeurs. Pour encore mieux comprendre les processus \u00e0 l\u2019\u0153uvre, elle se lance dans les neurosciences, dans le cadre d\u2019un post-doc \u00e0 Dresde. De retour en France, elle r\u00e9int\u00e8gre le centre INRAE de Dijon en 2015 comme charg\u00e9e de recherche. <br \/><br \/>Charlotte Sinding est membre du d\u00e9partement TRANSFORM (Aliments, produits biosourc\u00e9s et d\u00e9chets) du Centre des Sciences du Go\u00fbt et de l\u2019Alimentation (CSGA), unit\u00e9 mixte de recherche associant le Centre national de la recherche scientifique (CNRS), Universit\u00e9 Bourgogne-Franche-Comt\u00e9 (UBFC), INRAE et AgroSup Dijon. <br \/>UBFC a, par l\u2019interm\u00e9diaire du programme d\u2019investissement d\u2019avenir (PIA) ISITE-BFC, financ\u00e9 environ pour moiti\u00e9 la mise en \u0153uvre du programme de recherche de la jeune femme. Un financement r\u00e9cemment obtenu aupr\u00e8s de l\u2019Agence nationale de la recherche (ANR) va permettre sa poursuite pendant quatre ans. \u00ab <em>On conna\u00eet mal le fonctionnement des go\u00fbts et des odeurs. Cela nous am\u00e8ne \u00e0 travailler sur ce qui est inn\u00e9 et ce qui rel\u00e8ve de l\u2019apprentissage, sur la repr\u00e9sentation des aliments. Ce sont des questions fondamentales pour am\u00e9liorer l\u2019alimentation dans nos soci\u00e9t\u00e9s et relever des enjeux majeurs de sant\u00e9<\/em>. \u00bb Car l\u2019une des applications possibles des travaux de Charlotte Sinding, c\u2019est la possibilit\u00e9 de proposer \u00e0 certaines populations souffrant d\u2019ob\u00e9sit\u00e9, d\u2019hypertension ou de diab\u00e8te des produits alimentaires sains, de qualit\u00e9 et qui procurent du plaisir tout en contenant moins de sel ou de sucre.<br \/>Un espoir de taille, qui justifie l\u2019attribution, \u00e0 la chercheuse dijonnaise, du laurier INRAE 2020 du \u00ab jeune espoir scientifique \u00bb. \u00ab <em>Cette distinction r\u00e9compense le caract\u00e8re innovant et original de nos recherches.
